Meet Sanderson's new Bars Manager, Julien Casanova. Starting his mixology career in a nightclub in France, Julien worked his way up through the industry and moved to England to pursue the dynamic London bar scene. We caught up with Julien to find out a little more, including what his predictions are for drink of the summer, what his favourite spirit to work with is, and some top tips for every home bartender.
What’s your favourite cocktail to make?
I love making all cocktails! My favourite nights are the ones where I’m challenged to make as many different drinks as possible. It makes the job more interesting and allows me to push my boundaries even more.
What cocktail trend would you like to see disappear?
The “throwing technique”. Whilst it’s all part of the bar experience for a guest, it can sometimes ruin the quality of the final product.
What ingredient or spirit do you feel is underappreciated or underutilised?
Genever! It adds such a complexity to any drink. It was incredibly popular years and years ago, however since the boom of whisky, vodka and gin, it’s been forgotten about a little.
What’s your favourite base spirit to work with and why?
It won’t come as a shock for me to say gin. It’s so versatile and can be paired with multiple different spirits such as whisky to make a wide variety of different cocktails and drinks.
What’s your prediction for this year’s drink of the summer?
Non-alcoholic cocktails and spirits are definitely on the rise. There’s a real gap in the market for it, and so many possibilities which haven’t been explored. I’m curious to see what the future holds!
Do you have any tips for our readers and budding home bartenders?
Do your research and practice, practice, practice! Read a lot about spirits, cocktails, history, distillation processes and foraging. Keep it simple and don’t forget the number one goal – to entertain and create memories.
When you’re not looking after Sanderson’s bars, what do you get up to in your spare time?
I do a lot of sport! I’ve loved it since the age of 5. I find it essential for keeping balance, relieving stress and for general well-being.
